Made red coconut curry for dinner!
used the left over rice walnut casserole, and added mushrooms and kale

The Seeds of change simmer sauce is pretty tasty, a little oily for my liking, but still so so good!!
This soup has a lot of stuff in it! A bean mix that has a bunch of beans I can’t even remember right now, but it’s like 8 or 9 different type’s of beans. Then I threw in some left over Quinoa, Kamut Noodles, and Kale. For flavor I used paprika, cumin, rosemary, “ghost pepper”, black pepper, and bragg.
Very filling and tasty!!
